Learn to make 4 refreshing, healthy and delicious cucumber breakfast dishes. Low in Calories, Rich in Fibre and essential minerals and vitamins like vitamin K and potassium, eating cucumber on daily basis can help you achieve your fitness goals and to lose weight.

1. Cucumber Curd sandwich

1 large cucumber
1 small carrot
Some Capsicum
Some fresh Corns
1 small tomato
Salt & black pepper to taste
Some Italian seasoning
1-2 Tbsp Thick or hung Curd
Olive oil or ghee
4 bread slices

How to make Cucumber Curd sandwich:-

Wash peel and deseed cucumber and tomato, cut them and other vegetables into small pieces add in a bowl. Add salt and other seasoning along with thick Curd. Mix everything. Spread some desi ghee or olive oil on the bread slices. Place the cucumber mixture on a bread slice and cover it with another. Use a toaster, grilled or just normal pan or tava to toast the sandwich. These sandwiches will be very crispy from outside and soft and creamy from inside. ( Don’t keep the mixture for long as it may turn runny from the water content, also try to make the sandwich just before you want to eat them )

2. Hare bhare cucumber chille

1-1.5 grated cucumber
Some fresh chopped spinach
Some Thinly cut Capsicum
1 – 1.5 tsp dried fenugreek/ kasuri Methi
3/4 cup Chana Dal atta / or chickpeas flour
Salt to taste
Pinch of turmeric
1 tsp Cumin powder
Chilli to taste
1/2 tsp Garam Masala
Water as required

How to make Cucumber Chilla:-
In a bowl add all the above ingredients and make a semi thick batter. On a heated tava or pan spread the batter in circular motion. Sprinkle some oil on top. Cook the Chilla on low to medium heat from both sides until it tunes golden brown. Enjoy these healthy Chilla with Chutney or spread.

3. Spongy cucumber idli

1-1.5 cucumber grated
3/4 cup sour Curd / Yogurt
3/4 cup Rawa/ Semolina/ sooji
1/2 cup rice flour
Salt to taste
Water as required

For tempering:-
1/2 tsp olive oil
1 tsp mustard seeds
Some curry Leaves
4-5 chopped cashews
Some mixed seeds

How to make soft spongy cucumber idli:-
In a bowl mix all the above ingredients ( except ingredients listed under tempering ). Rest the batter for 15 minuets. Meanwhile prepare your tempering in a pan heat 1/2 tsp oil add mustard seeds and curry leaves ones they start to crackle add cashews and mixed seeds. Roast slightly on low heat until they Start to turn light brown. Add the tempering to the batter and mix well. Add salt. Transfer the batter into idli moulds and place the moulds in idli maker or large Patila where water is already hot. Cook for about 8-10 minuets. Let the, cool than demould and serve warm.

4. Oats with cucumber

3-4 Tbsp Oats
1 cucumber chopped
1 tsp olive oil
1 tsp mustard seeds
Some curry Leaves
2 Tbsp desiccated coconut
Water (Optional as required)
Some fresh coriander
1 chopped tomato
Handfull of peanuts and almonds
1.5 tsp pure Honey
Some raisins
2 Tbsp thick Curd

How to make Cucumber oats for breakfast:-
In a pan heat 1 tsp olive oil add mustard seeds and curry Leaves. Once they are cooked add desiccated coconut cook for a while and add oats. Roast oats dry or add water as required. Add one pinch salt. Once cooked keep aside and let it Cool slightly. In a bowl add freshly chopped coriander, cucumber and tomato mix well and add cooked oats mixture. Add Curd, honey and mix again in the end add nuts and mix again.
